Autumn in Tuscany is a celebration of the senses–the pungent smell of woodsmoke in the crisp October air; the sight of plump purple grapes heaped on wagons rolling to the wine press; the earthy, Bacchanalian flavors of castagnaccio–chestnut cake–washed down with a Colle Senese red; the delicate perfume of fresh porcini and precious ovuli mushrooms, served raw–dressed in olive oil and lemon juice–on crostini, or tossed in handmade tortellini; the riotous colors of red, yellow and green peppers, deep purple eggplants, crimson tomatoes and orange persimmons from the village campi, and the floral, grassy, transcendent taste of the new olive oil, that holy grail of all culinary experiences.
